吃西餐,必須注意餐桌上餐具的排列和置放位置,不可隨意亂取亂拿。正規宴會上,每一道食物、菜餚即配一套相應的餐具(刀、叉、匙),並以上菜的先後順序由外向內排列。進餐時,應先取左右兩側最外邊的一套刀叉。每吃完一道菜,將刀叉合攏並排置於碟中,表示此道菜已用完,服務員便會主動上前撤去這套餐具。如尚未用完或暫時停頓,應將刀叉呈八字型左右分架或交叉擺在餐碟上,刀刃向內,意思是告訴服務員,我還沒吃完,請不要把餐具拿走。

使用刀叉時,盡量不使其碰撞,以免發出大的聲音,更不可揮動刀叉與別人講話。

2.進餐禮儀

第三,蔬菜、冷盤或魚(也稱副菜)。可使用墊盤兩側相應的刀叉。

第四,主菜(肉食或熟菜)。肉食主菜一般配有熟蔬菜,此時要用刀叉分切後放餐盤內取食。如有色拉,需要色拉匙、色拉叉等餐具。

第五,餐後食物。一般為甜品(點心)、水果、冰淇淋等。最後為咖啡,喝咖啡應使用咖啡匙、長柄匙。
